MEXICAN FIESTA MEAL 
2 lg. bags corn chips, crushed
1 lg. box instant rice, cooked
1 1/2 lb. sharp cheddar cheese, grated
3 onions, diced
12 oz. pecans, chopped
Picante hot sauce
Meat sauce
2 heads of lettuce
7 tomatoes, diced
2 jars of olives, chopped
8 oz. coconut

The ingredients are placed on top of one another on each plate. The plate is first laid with a bed of corn chips, then rice, meat sauce, cheese, lettuce, tomatoes, onions, olives, pecans, and coconut. Serve with hot sauce.

MEAT SAUCE:

6 lbs. hamburger meat
2 cans tomatoes
3 tbsp. powdered garlic or garlic salt
3 chopped onions
2 sm. cans tomato puree

Cook meat and onions. Add remainder of ingredients. Simmer 1 hour; add water if necessary. Serves 24.
