DELICATE FLUFFY PANCAKES 
3 egg yolks
1 2/3 c. buttermilk
1 tsp. baking soda
1 1/2 c. flour
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. salt
3 tbsp. soft butter or oil
3 egg whites, stiffly beaten

Beat egg yolks well with rotary beater. Beat in buttermilk and soda. Sift together and beat in flour, sugar, baking powder and salt. Beat in butter or oil. Gently fold in beaten egg whites.

NOTE: To make this recipe a little healthier, we reduce the egg yolks to 2, use lowfat buttermilk leave out the salt, and use 2 tablespoons canola oil (Puritan) instead of butter. This is often our Saturday morning breakfast, and Dad is usually "in charge."
