STRAWBERRY DELIGHT | |
1 can sweetened condensed milk 4 beaten eggs 1 box powdered sugar 1 tsp. vanilla 1 1/2 boxes crushed vanilla wafers 1/2 c. melted butter 1 c. chopped pecans 2 c. whipping cream 2 (16 oz.) pkgs. frozen strawberries or 2 lbs. fresh strawberries In double boiler cook milk, eggs and sugar until thick. Remove from heat. Add vanilla and cool. Combine crushed vanilla wafers and melted butter in a separate bowl. Spread 1/2 of vanilla wafer mix in the bottom of a 9"x13"x2" pan. Pour on top of that the condensed milk mixture; layer with pecans. Spread over that 1/2 of the whipped cream (whipped) and cover with strawberries and top with the remaining whipped cream. Top with remaining vanilla wafers. Cover with foil and freeze. Thaw for 1 hour before serving; garnish with fresh strawberries. Keeps for 1 week in freezer. Serves 16. |
