HUSSAR COOKIES (Butter Cookies) | |
1 c. (1/2 lb.) butter 1/2 c. vanilla sugar 3 egg yolks Grated rind of 1 lemon 2 c. twice-sifted flour 1/2 tsp. salt 1/2 c. apricot or raspberry jam, heated Cream butter and sugar until fluffy. Beat in egg yolks one at a time. Stir in lemon rind, flour and salt until dough is thoroughly blended. Drop by plump, high-rounded teaspoonfuls onto ungreased baking sheet. With forefinger, poke a depression into each cookie. Bake in preheated oven (450 degrees) 7 minutes or until cookies just begin to take on color. Let cookies cool about 5 minutes; then fill each depression with 1/4 teaspoon jam. Let cookies stand until completely cold. About 6 dozen cookies. Vanilla Sugar is made by putting a vanilla bean into confectioners' sugar and leave there for a few days for the sugar to acquire the vanilla aroma and taste. |
