ZUCCHINI BREAD 
3 eggs
1 cup oil
1 tsp. vanilla
1 tsp. cinnamon
2 cups shredded zucchini
2 cups sugar
2 cups self rising flour
1 cup nuts (chopped)

Combine eggs, oil, vanilla, and zucchini. Mix well. Add remaining ingredients and stir until moist, pour in greased and floured pans.

Bake at 350°F for 45 minutes to 1 hour.

Makes 2 loaves.
