CHICKEN ROTEL 
6 chicken breasts or 1 whole chicken
1 lg. pkg. tortilla chips
1 can cream of chicken soup
1 soup can milk
2 cans Rotel tomatoes, diced with green chilies
1 1/2-2 lbs. Velveeta cheese

Cook chicken, remove skin and bone, dice. Cut Velveeta into small pieces. In large microwave bowl combine cheese, soup, Rotel and milk - microwave on High until cheese is melted - stir every 4-5 minutes. Place chips in 13 x 9 inch baking dish, cover with diced chicken and pour cheese mixture over evenly. Heat in 325 degree oven for 30 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
