SKILLET MEATLOAF 
2 lb. ground beef
3/4 c. fresh bread crumbs (3 slices bread)
1/3 c. milk
1/4 c. catsup
2 eggs. beaten
1 tbsp. dehydrated onion flakes
1/2 tsp. garlic salt
1/2 tsp. Tabasco pepper sauce
1 tbsp. butter of butter
3 slices cheddar or American cheese, cut in half
Green pepper rings

In large bowl combine ground beef, bread crumbs, milk, catsup, eggs, onion flakes, garlic salt and Tabasco sauce; mix well. In large skillet melt butter; remove from heat. Press beef mixture into skillet.

Cook on grill over low heat about 20 minutes or until lightly browned. Drain fat. Place plate over skillet; turn meat over onto plate. Slide meat off plate back into skillet. Cook about 15 minutes longer or to desired doneness.

Arrange cheese slices over meat. Cover skillet. Cook 5 minutes longer or until cheese is melted. Garnish with green pepper rings. Serve with hot sauce. Makes 6 servings.
