CRUNCHY PEA SALAD | |
2 (10 oz.) pkg. frozen peas (uncooked) 1 c. celery, thinly sliced 1 (5 oz.) can water chestnuts, sliced 3 green onions, sliced 1/4 to 1/2 lb. baby shrimp or 6 slices bacon, crumbled 1/2 c. fresh cauliflower 1 c. mayonnaise 2 tsp. sugar 1/3 c. sliced walnuts or almonds Mix peas, celery, water chestnuts, cauliflower and shrimp in large bowl. Make dressing of mayonnaise and sugar. Mix dressing into vegetables and sprinkle walnuts on top. Let salad sit several hours or overnight in refrigerator. Serves 6. |
