BASIC MEATBALLS
1/2 lb. ground beef
1 egg
4 tbsp. cream
1/4 c. dry bread crumbs
1/2 tsp. salt
1 tbsp. plus 1 tsp. finely chopped onion
1/4 tsp. cornstarch
1/8 tsp. allspice
1 tsp. salad oil

Combine egg and cream, blend and pour over dry bread crumbs, onion, salt, cornstarch, allspice. Add ground beef and mix until mixture holds its shape. Form into meatballs, the size of walnuts. Preheat pan to 325 degrees. Add 1 teaspoon salad oil, place meatballs in pan and cook approximately 15-20 minutes, turning frequently to brown on all sides. Remove from pan and drain off fat.

Clean the pan and make a sauce of your choice from one of the recipes listed below. Meatballs can be prepared in advance and combined with the heated sauce just before serving. Top with snipped parsley or dill weed, about 20-25 meatballs.
