MY GRANDMOTHER'S "DATE OATMEAL
BARS"
 
1 1/2 c. dates, cut up
1/2 c. water
1/4 c. sugar
pinch of salt
1/2 tsp. vanilla
1 1/2 c. quick cooking oatmeal
1 1/2 c. flour
3/4 c. butter
1 c. brown sugar
1/2 tsp. baking soda
pinch of salt

Cook first 5 ingredients for 3 minutes, then allow to cool. Mix last 6 dry ingredients as for pie crust. Spread 1/2 of the crust mixture in a 9 x 12-inch pan and press until firm. Cover with date filling, then pat remaining crust on top.

Bake 30 minutes in a 325°F oven. When cool, cut into squares and watch them disappear!
