SWEET RED PEPPER SAUCE | |
2 med. sweetened peppers, seeded and cut in 1 inch pieces 2 tbsp. sliced green onion 2 cloves garlic, crushed or minced 1/2 tsp. thyme 1 tbsp. dry white wine 1 tbsp. chicken broth 2 tbsp. evaporated skim milk Fresh ground pepper 1/8 tsp. salt Combine peppers, onion, garlic, thyme, wine, and broth in a microwave proof 9 inch pie plate or cake pan. Cover with plastic wrap and vent. Microwave on high 4 minutes or until soft, stirring once. Let stand 2 minutes. Process or blend until almost smooth. Add milk, pepper, and salt. Process until combined. Keep warm. Serve with poached fish, cooked pasta or cooked breasts. Serves 4. |
