SWEET RED PEPPER SAUCE 
2 med. sweetened peppers, seeded and cut in 1 inch pieces
2 tbsp. sliced green onion
2 cloves garlic, crushed or minced
1/2 tsp. thyme
1 tbsp. dry white wine
1 tbsp. chicken broth
2 tbsp. evaporated skim milk
Fresh ground pepper
1/8 tsp. salt

Combine peppers, onion, garlic, thyme, wine, and broth in a microwave proof 9 inch pie plate or cake pan. Cover with plastic wrap and vent. Microwave on high 4 minutes or until soft, stirring once. Let stand 2 minutes. Process or blend until almost smooth. Add milk, pepper, and salt. Process until combined. Keep warm. Serve with poached fish, cooked pasta or cooked breasts. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
