2 1/2 c. crushed pineapple
3 oz. pkg. lemon Jello
1/2 c. mayonnaise or salad dressing
1 c. hot water
1 c. grated carrots
5 oz. jar pimiento cheese spread

Drain pineapple, reserve 3/4 cup syrup. Dissolve gelatin in hot water. Add mayonnaise and cheese. Beat smooth with electric or rotary beater. Stir in reserved pineapple juice. Chill until partially set. Fold in carrots and pineapple. Turn into a 5 1/2 cup ring mold. Chill until firm. Unmold and fill with grapes or other fruit if desired.
