STIR-AND-DROP SUGAR COOKIES 
2 lg. eggs
2/3 c. vegetable oil
2 c. all-purpose flour
2 tsp. baking powder
3/4 c. sugar
2 tsp. grated lemon rind
2 tsp. vanilla extract
2 1/2 c. sifted powdered sugar
1 tbsp. butter, melted
2 tbsp. lemon juice
1 tbsp. water
1/2 tsp. vanilla extract
1 to 2 drops desired food coloring

Combine eggs and vegetable oil in a large bowl; beat at medium speed with an electric mixer until blended.

Combine flour, baking powder, and sugar; add to egg mixture, beating well. Stir in lemon rind and 2 teaspoons vanilla. Drop dough by rounded teaspoonfuls onto ungreased baking sheets. Bake at 350 degrees for 10 to 12 minutes. Transfer cookies to wire racks; then cool completely.

Combine powdered sugar and next 4 ingredients; stir until smooth. Stir in food coloring. (Add 1 additional tablespoon water, if needed, to make desired consistency.) Spread on cookies. Yield: 3 1/2 dozen.
