ENCHILADAS 
20 corn tortilla shells
1 1/2 lbs. hamburger
1 c. chopped onion
1 (30 oz.) can chili mix with beans
1 1/2 lbs. shredded Colby cheese
1 head of shredded lettuce
2 to 3 tomatoes, chopped
2 tsp. garlic powder
2 tsp. cumin
Salt

Brown hamburger; season with garlic powder, cumin and salt. Cook tortilla shells until foldable; not long, 2 to 3 seconds in hot oil. Line an 8 x 9 x 2 inch dish with foil. Stuff cooked tortilla shells with mixture of hamburger, onions and cheese. Roll; place in foiled pan. Cover with chili mix. Cover with foil. Bake at 350 degrees for 30 minutes or until warmed through.
