SPINACH SALAD 
DRESSING:

1/3 c. olive oil
4 tbsp. wine vinegar
1 clove garlic
1 tsp. prepared mustard
1/3 c. Parmesan cheese
Salt & pepper

SALAD:

1 lb. fresh spinach
1 red onion
1 (8 oz.) jar artichoke hearts, marinated
1/2 c. garlic croutons
1/2 c. Parmesan cheese
6 slices bacon, cooked & crumbled

Mix dressing ingredients thoroughly. Prepare salad ingredients. Toss together until dressing is throughout salad.
