POTATO DOUGHNUTS | |
3 eggs 3/4 c. sugar 3 tbsp. soft shortening 2 3/4 c. sifted flour 4 tsp. baking powder 1 tsp. salt 1/4 tsp. nutmeg 1 tsp. mace 1 c. mashed potatoes Beat eggs well. Beat in sugar and shortening. Sift dry ingredients together and stir in. Stir in potatoes. Chill dough 2 hours. Turn onto generously floured board. Roll dough about 1/3 inch thick. Let rest 20 minutes. Cut with doughnut cutter; fry in 370 to 380 degree fat until brown. Drain on absorbent paper. Serve plain, sugared or glazed. |
