SPUD DOUGHNUTS 
1/2 c. shortening
1 tsp. salt
2 eggs, beaten
1/2 c. mashed potatoes
1/2 c. sugar
1 c. lukewarm water
1 pkg. yeast (can use 2 pkgs. if your time is limited)
Approx. 6 c. flour

Dissolve yeast in water. In separate bowl mix shortening, salt, eggs, potatoes and sugar. Stir in yeast mixture. Add enough flour to make dough soft. Let rise until double in size. Cut into doughnuts and let rise again. Fry in deep fryer. Makes 4 to 6 dozen.
