ENCHILADAS 
2 lbs. ground beef or turkey
1 can refried beans
1 pkg. corn tortillas (softened)
1 can enchilada sauce
1 can tomato sauce
1 1/2 - 2 c. shredded Cheddar cheese
1 sm. onion (chopped)
3 tbsp. taco spice

Brown meat in heavy skillet with onion and taco spice. Add refried beans, stir well and set aside.

Mix tomato and enchilada sauce together and pour approximately 1/3 into meat mixture, reserving remaining sauce. Fill each tortilla, putting seam side down into a glass baking dish. Top with remaining sauce then sprinkle all of the cheese on top. Bake at 350 degrees for 25 minutes or until heated through.
