GREEN PEPPER JELLY 
6 lg. green peppers, cubed
1 1/2 c. cider vinegar
1 tbsp. crushed red pepper
1/2 tbsp. salt
1 bottle or 2 pkgs. pectin
6 c. sugar
Green food coloring

Place 1/2 the green pepper pieces in a blender with 1/2 the vinegar; process until liquid. Pour into saucepan. Repeat with remaining pepper pieces and vinegar and add to saucepan. Stir in red pepper, sugar and salt. Heat to boiling. Stir in pectin. Add a few drops green coloring and pour in jars. Seal. Serve on crackers and cream cheese.
