GRAPEFRUIT MERINGUE PIE 
2 c. tree-ripened grapefruit juice
3/4 c. granulated sugar
3 lg. egg yolks
1 tbsp. butter
5 tbsp. cornstarch
1/8 tsp. salt

MERINGUE:

3 egg whites
6 tbsp. sugar

Put all ingredients in top of double boiler. Mix thoroughly egg yolks, broken and well mixed. Cook over boiling water until thick and creamy, stirring constantly. Cool before placing in graham cracker or pastry shell.

Beat egg whites and sugar together until peaks form or beat egg whites first and beat in sugar, 1/2 teaspoon at a time. Bake briefly at 325 to 350 degrees until light brown.
