WATERMELON PICKLE 
4 qt. watermelon rind
2 tsp. salt
1 tbsp. mixed spices
1 tsp. cinnamon
Water to cover
2 c. sugar
2 lemons, cut in fine strips
1 c. vinegar

Pare and slice watermelon rinds. Add salt and enough water to cover. Boil until tender, drain overnight in colander. Add all remaining ingredients for syrup, cook slowly 15 minutes. Put rind in jars. Cover with hot syrup. Seal. Always use sterile jars.
