ZUCCHINI PIZZA | |
3 1/3 c. coarsely grated zucchini (about 4 med. sized zucchini) 2 eggs, beaten 1/3 c. flour 1/2 c. grated Parmesan cheese Salt, pepper, oregano to taste Olive oil 8 oz. tomato sauce 8 oz. Mozzarella cheese, grated Preheat oven to 350 degrees. Lightly salt the grated zucchini and let stand for 15 minutes. Squeeze out excess moisture. Combine zucchini with eggs, flour, Parmesan cheese, 1/2 cup grated Mozzarella, salt and pepper. Spread mixture into a greased 9x13 inch baking pan. Bake in a 350 degree F. oven for 20 to 25 minutes or until surface is firm and dry. Cover crust with tomato sauce and the rest of the Mozzarella cheese. Sprinkle with oregano. Bake in 350 degree oven for 25 minutes. Cut in squares and serve hot. |
