TACO BAKE CASSEROLE 
1 lb. ground beef
1 can corn, drained
1 pkg. taco seasoning
1 (8 oz.) can tomato sauce
2 diced jalapenos (optional)
1 box Jiffy corn muffin mix
2.8 oz. can Durkee onion rings
1 c. grated cheddar cheese

Preheat oven to 350 degrees. In a skillet brown meat and drain. Add taco seasoning, corn, tomato sauce, and jalapenos. Bring to a boil, then reduce heat and simmer. In a separate bowl, prepare muffin mix as directed on box. Add half the can of onion rings. In a casserole dish, pour in meat mixture. Spoon muffin mix around outer edges of meat mixture leaving a hole in the middle. Bake at 350 degrees until muffin mix is done. Remove from oven and sprinkle other half of onions and cheese on top. Place back in oven until cheese has melted. Remove from oven and serve. Serves 8 to 10.
