VEAL SCALLOPINI 
1 1/2 lb. veal stew
2 med. green peppers
1 lg. onion
2 sm. garlic cloves
1 (4 oz.) tomato sauce
Fresh mushrooms
1 c. rice
Oil

Cut meat into serving pieces. Put salt on bottom of frying pan and then veal pieces in. Cover pan and let simmer 20 minutes. Uncover pan and brown meat in own juices.

Meanwhile put enough oil to cover bottom of frying pan #2. Put sliced peppers and onions in pan and cover. Steam vegetables until soft. Pour tomato sauce and fresh mushrooms into frying pan #2. Simmer 5 minutes. Add mixture of 2nd frying pan to browned meat in frying pan #1. Season with salt and pepper. Serve over a bed of rice.
