CHOCOLATE CHIP BLONDIES 
2 eggs
1 1/2 cups all purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup sugar
1/3 cup vegetable oil
chocolate chips (or white chocolate chips, if you prefer.)

Preheat oven to 350°F.

Lightly grease an 8 inch square baking pan with cooking spray or butter. In a small bowl, beat the eggs with a fork and set aside.

Into a large mixing bowl, sift the flour, baking powder, salt, and sugar. Add the oil to the flour mixture and beat with an electric mixer set on medium speed for 1 minute or until batter is thoroughly blended. Stir in chocolate chips (as many as you would like, just not too much or will ruin flavor).

Spoon batter into prepared pan and spread around evenly. It will be very stiff.

Bake for 25 to 30 minutes, until top is golden brown. Remove from oven and cool for 20 minutes on a rack. Cut into squares.
