RHUBARB UPSIDE DOWN CAKE 
Rhubarb, chopped
2 1/4 c. brown sugar
1 stick butter
1 c. sugar
1 egg
1 c. sour milk
1 tsp. baking soda
1 1/2 c. flour
Pinch of salt

Grease (generously) a 9 x 13 inch pan with butter. Fill with chopped rhubarb 1 inch from top of pan. Cover rhubarb with 2 1/4 cups brown sugar. Mix 1 stick of butter, 1 cup sugar, 1 egg, 1 cup sour milk, 1 teaspoon baking soda, 1 1/2 cups flour, pinch of salt; mix well. Spread over brown sugar and rhubarb. Bake at 350 degrees until done. Test with toothpick in center of pan.
