SWEET JAMMIES MUFFINS | |
2 c. flour 1/4 c. sugar 1/2 tsp. baking soda 1/4 c. butter 1/4 c. milk 1/2 tsp. vanilla 1 tbsp. baking powder 1/2 tsp. salt 1 c. plain yogurt 1 egg 1 c. jam or preserves Confectioners' sugar Heat oven to 425 degrees. Butter muffin cups. Blend dry ingredients. Melt butter. Take off heat. Stir in yogurt and milk. When smooth, stir in egg and vanilla. Add butter mixture to dry ingredients and stir well. Spoon half the batter into muffin cups. Place about a teaspoon of jam over batter in each cup and top with remaining batter. Bake 15 to 20 minutes until golden. Let stand 5 minutes before removing from tin. Sift confectioners' sugar over muffins just before serving if you like. |
