MICROWAVE MEAT LOAF 
1 (8 oz.) can tomato sauce
1/4 c. firmly packed brown sugar
1 tsp. prepared mustard
2 lb. lean ground beef
1/4 c. cracker crumbs
2 lg. eggs slightly beaten
1 med. onion minced
1 1/4 tsp. salt
1/4 tsp. pepper

Combine tomato sauce, brown sugar and mustard. Set aside. Combine remaining ingredients and add 1/2 c. tomato sauce mixture, blend well. Fill 8 cup microwaveable ring mold (we use an inverted custard cup in middle of 2 quart casserole dish for ring mold.) Pour remaining tomato sauce evenly over top. Place in oven. Insert temperature probe into center of meatloaf. Cook at high about 12 minutes to 160 degrees. Let stand in microwave for 5 minutes before serving. Total cooking time is about 17 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
