CREAM OF MUSHROOM SOUP 
1/2 lb. mushrooms, chopped fine
3 tbsp. butter
1 tbsp. minced onion
2 tbsp. minced celery
2 c. chicken broth
2 tbsp. flour
2 c. half and half cream
1 tsp. salt
1/8 tsp. pepper

Saute mushrooms in 1 tablespoon butter for 5 minutes, with the onion and celery. Add chicken broth and simmer for 10 minutes. Meanwhile, melt the remaining 2 tablespoons butter, add the flour. Stir until smooth, then add the half and half, salt and pepper. Cook, stirring constantly until smooth and thickened. Add the mushroom mixture, heat and serve. Makes 6 servings. Out of this world!
