CRUMB PIE 
3 egg whites
1 cup sugar
20 Ritz crackers, crushed
1/2 tsp. baking powder
1 tsp. vanilla
1 cup chopped pecans

TOPPING:

whipped cream (I use Cool Whip)
coconut flakes, for sprinkling

Preheat oven to 350°F.

Beat egg whites until still. Add sugar. Crush 20 Ritz crackers very fine. Add crackers, baking powder, vanilla and chopped nuts. Mix well. Place in well greased pie pan.

Bake at 350°F for 30 minutes. Cool then top with whipped cream and coconut flakes.
