GOOD CARROT CAKE 
2 c. sugar
1 c. vegetable oil
4 eggs, beaten
2 tsp. baking soda
2 1/2 tsp. cinnamon
1 tsp. vanilla
2 c. flour
1/2 c. chopped pecans
3 c. grated carrots

Combine all ingredients except carrots in order listed. Beat 3 minutes. Add carrots. Beat 2 minutes. Bake at 325 degrees for 30 minutes.

FROSTING:

1 (8 oz.) cream cheese
2/3 stick butter
1 (1 lb.) box confectioners' sugar
1 c. pecans
2 tsp. vanilla

Cream the softened cream cheese and butter. Add sugar and mix well. Stir in pecans and vanilla. Spread over cooled cake.
