FRESH APPLE WAFFLES 
1 3/4 c. flour
2 1/2 tsp. baking powder
1 tbsp. sugar
2 beaten egg yolks
1 1/4 c. milk
2 tbsp. oil
2 apples, pared & cored
2 stiffly beaten egg whites
Apple-Cinnamon Sauce

Stir together flour, baking powder, salt and sugar. Combine egg yolks, milk and oil. Add to dry ingredients; mix well. Shred apples and add to batter. Fold in egg whites. Bake in hot waffle iron. Makes 4 cups batter. Waffles may be baked ahead, frozen and reheated in toasted. Serve with Apple-Cinnamon Sauce.

APPLE-CINNAMON SAUCE:

1 (10 oz.) jar apple jelly
2 tbsp. red cinnamon candies
1/4 c. water

Heat together in a small saucepan. Stir until candies dissolve jelly melts. Cool; pour into bowl.
