FREDA'S BLUEBERRY MUFFINS | |
1 1/2 c. flour 1/2 c. sugar (I use 1/3) 2 tsp. baking powder 1/2 tsp. salt 1/4 c. oil 1 egg or 1/4 egg substitute 1/2 c. milk (I use skim, dry or lowfat) 1 tsp. vanilla 1 c. blueberries Sift together flour, sugar, baking powder, and salt into mixing bowl. Then add oil, egg, milk, vanilla, and blueberries. Mix together just until ingredients are blended. Fill greased muffin cups 2/3 full. Bake 20-25 minutes at 400 degrees. |
