QUICK ZUCCHINI CAKE | |
1 box yellow cake mix 4 eggs 1/2 c. vegetable oil 1 tsp. cinnamon 2 c. unpeeled grated zucchini 1/2 c. raisins 1/2 c. chopped nuts 1 tbsp. vanilla Confectioners sugar (optional) Beat cake mix, eggs, oil, cinnamon and vanilla in large bowl for 6 to 7 minutes. Fold in zucchini, raisins and nuts. Grease and flour a 10 inch tube pan. Spoon in batter and bake at 350 degrees for 40 to 50 minutes. Test with toothpick at 40 minutes for doneness. Retest at 5 minute intervals. Remove cake from pan. Let cool on wire rack. Sprinkle with confectioner's sugar if desired. Yields 16 to 20 servings. |
