EASY BREAKFAST CASSEROLE 
1 lb. sausage
1 1/2 to 2 c. grated Cheddar cheese
4 eggs
2 pkg. crescent rolls
Salt and pepper

Line baking dish with 1 package crescent roll dough (unfolded). Press into dish so that cracks are sealed. Fry and drain sausage. Place over crescent rolls in dish. Sprinkle cheese over sausage. In a side dish, lightly beat eggs with salt and pepper. Pour over cheese. Unfold second package of crescent rolls and place on top of sausage, cheese, egg mixture.

Bake according to instructions on can of rolls. (It sometimes takes a few minutes more.)

Hi Teresa,

I know that the version of this dish made using bread slices can be refrigerated overnight, but have not tried preparing the biscuit version in advance. I imagine that the biscuit dough might get a bit soggy but that is part of the appeal of the bread version which makes a sort of custardy bread pudding.

I use canned biscuits instead and I cook it the night before so it can be popped in the microwave for breakfast and I have the oven free for the Holiday cookings. I have also added some veggies jsut for a little more taste.

I used ham instead of sausage and added some cream cheese. It was delicious and so simple!
