CREAM OF POTATO SOUP 
2 c. diced cooked potatoes
1 tbsp. chopped pimento (optional)
3 slices bacon, cooked crisp and crumbled
1 med. onion, chopped
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1/2 tsp. pepper
3 c. milk
1/2 c. sour cream
Chopped chives for garnish

Melt butter in saucepan. Blend in flour, salt, and pepper. Add milk all at once. Cook quickly, stirring constantly until mixture thickens and bubbles. Add potatoes, bacon, onion, and pimento. Simmer 5 minutes, stirring constantly and adding more milk if mixture becomes too thick. Add sour cream. Stir. Remove from heat. Garnish with chopped chives.
