CASSEROLE CHICKEN DINNER 
1 lg. chicken
2 onions, sliced
2 raw carrots, diced
5 tbsp. Crisco
1 c. tomatoes
1/2 tsp. paprika
3 tsp. salt
1 c. rice, washed & drained
1/4 tsp. pepper
3 c. boiling water

Clean chicken, cut into frying pieces. Flour lightly. Melt Crisco in heavy skillet and brown onions; remove onions. Use same Crisco to fry chicken until browned. Put in center of large roasting pan with cover. Combine carrots, tomatoes, all other seasonings and boiling water. Pour over chicken, then sprinkle rice around chicken. Place onion slices over and around chicken. Bake until done and then remove cover so that it will brown.
