H.'S HEAVENLY NO PORK RED BEANS 
2 (12 oz.) pkgs. dried sm. red beans
1 lg. smoked turkey wing
1 tsp. Adobo seasoning (with no MSG)
1 tsp. whole thyme
1 lg. bay leaf
1 lg. onion, peeled & quartered
1 (4 oz.) can tomato sauce
2 qts. water

1. Rinse beans and soak in 1 quart cold water overnight.

2. Add 1 quart cold water and start boiling in large Dutch oven (total of 2 quarts water and beans.)

3. Add turkey wing, onion and spices and cook on medium for 1 1/2 hours. Check for doneness of beans. Stir occasionally.

4. Add tomato sauce and continue to cook and stir if beans are not soft, 15 minutes at a time.
