MISSISSIPPI MUD CAKE 
1 c. hot water
1/2 c. oil
2 c. sugar
4 tbsp. cocoa
1/2 c. buttermilk
1 stick butter
2 c. self-rising flour
2 eggs, beaten
1 tsp. baking soda
1 tsp. vanilla

Place hot water, butter, oil in bowl and let melt. Put dry ingredients in another bowl. To hot water add buttermilk, eggs, vanilla, then slowly add flour mixture and mix together. Do not use a mixer, use spoon. Ice while hot. Bake at 350 degrees for 30-40 minutes.

CHOCOLATE ICING:

1 stick butter, melted
4 tbsp. cocoa
1 box powdered sugar
8-10 tsp. milk
1 tsp. vanilla
