SOPAPILLAS 
1 3/4 c. all-purpose flour
1/4 c. sugar
1 tbsp. baking powder
1/2 tsp. salt
Oil for frying
3/4 c. milk
2 c. Bran Chex cereal, crushed to 1/2 c.
1/4 c. (1/2 stick) butter, softened
Cinnamon/sugar mixture

Preheated 375 degree deep fryer. In large bowl combine flour, sugar, baking powder, salt and cereal. Cut in butter to form fine crumbs. Add milk all at once to dry ingredients. Stir with fork until mixture forms balls. Knead on lightly floured surface until dough is smooth, about 10 times.

Divide dough in half. Roll out each half onto lightly floured surface into 12 1/2 x 10 inch rectangles. Cut each into 25, 2 1/2 inch triangles. Place into hot oil with slotted spoon. Fry 35 to 45 seconds or until golden brown, turning to brown evenly. Drain well on absorbent paper. While still warm, sprinkle with cinnamon/sugar mixture. Serve warm. Makes 50.
