SOPAPILLAS 
1 3/4 c. flour
2 tsp. baking powder
1 tsp. salt
2 tbsp. shortening
2-3 c. water
Confectioners' sugar or honey

Mix flour, baking powder and salt. Cut in shortening to make biscuit-like dough. Knead a few minutes. Let rest at least 15 minutes. Roll thin and cut in diamond shapes (3"). Make sure all edges are smooth. Fry in hot deep fat until light brown. Drain. Sprinkle with confectioners' sugar or honey.
