GRILLED PEANUT CHICKEN 
Chicken tenders or breasts cut into chunks

MARINADE:

1/2 c. chunky peanut butter
1/2 c. peanut oil
1/4 c. white wine vinegar
1/4 c. soy sauce
1/4 c. lemon juice
4 garlic cloves, minced
2 tsp. red pepper flakes
1 tsp. dried ginger

Mix all ingredients in blender until smooth. Marinate chicken pieces overnight. Thread in skewers. Alternate with onions if desired. Grill about 7 minutes per side.

Also excellent as a marinade for beef kabobs.
