CHOCOLATE SNACK CAKE 
1 2/3 c. all purpose flour
1 c. brown sugar (packed)
1/4 c. cocoa (4 tbsp.)
1 tsp. baking soda
1/2 tsp. salt
1 c. water
1/3 c. vegetable oil
1 tsp. vinegar
1/2 tsp. vanilla

Heat oven to 350 degrees. Mix brown sugar, flour, cocoa, baking soda and salt in a bowl with a fork. Stir in remaining ingredients. Pour into ungreased 8 x 8 x 2 inch pan. Sprinkle 1/3 cup mini-chips or regular chips over batter in pan. Bake 25 to 30 minutes.

VARIATIONS:

Applesauce Snack Cake:

Omit cocoa and vanilla. Add 1 1/2 teaspoons allspice to ingredients. Use 1/2 cup water and 1/2 cup applesauce.

Maple-Nut Snack Cake:

Omit cocoa and vanilla. Stir 1/2 cup chopped pecans into flour mixture. Stir in 1/2 teaspoon maple extract with the water.

(These recipes may be doubled and baked in a 9 x 13 x 2 inch pan. They also may be used for cup cakes.)
