BISCOTTI 
6 eggs or 1 1/2 containers Egg Beater
1 c. sugar
5 tbsp. melted butter
2 tsp. anise or flavor of choice
3 1/4 c. flour
2 1/2 tbsp. baking powder

Beat eggs, sugar, butter and flavoring until light. Sift flour and baking powder. Stir into egg mixture. At this point you may add toasted almonds. Dough will be very sticky. Spray or grease cookie sheet. Divide dough. With floured hands, shape into loaf 3 x 12 inches on cookie sheet. Do the same with the other half. Bake at 350 degrees for 20 minutes or until toothpick inserted in center comes out clean. Slice while warm as sponge or slice and return to oven for 15 minutes or more for toast.
