SEASIDE SALAD 
1 1/2 c. water
1/2 lb. unpeeled fresh shrimp
1/2 lb. fresh crabmeat
1/2 c. cooked reg. rice
1/2 c. diced celery
1/4 c. diced pimento-stuffed olives
1/4 c. diced green onions
1/4 c. mayonnaise
1 1/2 tsp. lemon juice
1/4 c. mayonnaise
1 1/2 tsp. grated orange rind
1 tsp. sugar
1/2 c. coarsely chopped mandarin orange sections
3 ripe avocados, halved and seeded
Additional mandarin orange sections (optional)

Bring water to a boil; add shrimp, and cook 3 to 5 minutes. Drain well, rinse with cold water. Chill. Peel and devein shrimp.

Combine shrimp and next 9 ingredients in a bowl; stir well. Stir in chopped mandarin orange sections. Chill. To serve, fill avocado halves with shrimp mixture. Garnish with additional mandarin orange sections, if desired. Yield: 6 servings.
