YELLOW SQUASH CASSEROLE 
1/4 c. melted butter
1 lb. yellow squash, thinly sliced
1/2 tsp. salt
1/4 tsp. pepper
1 beaten egg
1/2 c. mayonnaise
1/4 c. chopped green pepper
1/3 c. chopped onion
1 tbsp. chopped pimento
1 tsp. sugar
1/2 c. shredded cheese, or to taste

Pour melted butter into a 1 1/2 quart casserole; add squash and sprinkle with salt and pepper. Combine egg, mayonnaise, green pepper, onion, pimento, and sugar; mix well and pour over squash. Sprinkle evenly with cheese. Bake at 350 degrees for 35-40 minutes.
