SOUTH OF THE BORDER SQUASH | |
4-5 med. yellow squash 1 med. onion, chopped 1/2 tsp. salt 1/2 c. water 1 (4 oz.) can chopped green chilies 1 c. grated Cheddar cheese or Monterey Jack Frito corn chips Wash and scrub squash. Cut into 1/4 inch slices. Combine first 4 ingredients in a saucepan and cook until tender, not mushy. Drain. Add chilies; mix well and pour into a greased casserole dish. Top with cheese and enough crushed chips to cover. Bake at 350 degrees for 20 minutes or until thoroughly heated. |
