SAUSAGE - SPINACH LASAGNA 
8 oz. mozzarella cheese, shredded
1 lb. sausage
32 oz. jar spaghetti sauce
1 tsp. dried Italian herb seasoning, crushed
16 oz. container sour cream
10 oz. pkg. frozen spinach, thawed and squeezed
1/2 c. grated Parmesan cheese
3 eggs
8 oz. lasagna noodles, cooked and drained

Brown sausage over medium heat, drain off fat. Spread thin layer of spaghetti sauce in bottom of 3 quart oblong dish. Stir remaining sauce and Italian seasoning into sausage. Set aside. In large mixing bowl combine sour cream, spinach, Parmesan and eggs until blended. Layer half of the noodles, half of sausage mixture and half of spinach mixture and repeat. Cover and refrigerate up to 24 hours. Bake uncovered in 350 degree oven for 50 to 55 minutes and sprinkle mozzarella cheese over the top. Bake 3 to 5 minutes longer. Prep time: 30 minutes.
