SALMON LOAF 
4 to 5 med. peeled potatoes
3 lg. scraped carrots
3 to 4 stalks celery
1 onion
1 egg
1/2 c. cracker crumbs
1 tsp. salt
1/2 tsp. pepper
1 lb. can salmon
1 c. water
Butter

Cut raw vegetables into small chunks. Flake salmon. Mix crumbs, egg, seasonings and water. Mix altogether and bake in a greased loaf pan. Dot with butter. Bake in 450 degree oven 1 hour. A salad served with it, makes a good meal for 4.

NOTE: 2 small cans tuna could be substituted for the salmon.
