SOUTHWESTEN CHICKEN AND POTATO 
This recipe is great with a dinner roll and a glass of White Zinfandel.

1 1/2 lb. boneless chicken breasts
1 1/2 tbsp. butter
4 medium size red potatoes
1 bag frozen red, yellow and green peppers (with onions)
3 packets Sazon seasoning, divided
3 tbsp. Adobo seasoning
3/4 tbsp. oregano
1/2 tbsp. garlic powder
salt and pepper, to taste

Preheat oven to 350°F. Heat frying pan on medium and coat with butter.

Cut red potatoes into cubes and boil for 10 minutes. Wash chicken and cut into cubes.

To hot pan, add 2 packets of Sazon, Adobo seasoning, oregano and garlic powder. Add cubed chicken to frying pan and cover for 7 minutes, stir occasionally.

Defrost pepper/onion mix in microwave for 2 minutes. Put into pan with chicken.

Drain potatoes and put into 9x13-inch clear Pyrex dish. Add chicken and peppers. Sprinkle remaining packet of Sazon all over chicken and potatoes. Lightly sprinkle with oregano. Salt and pepper to taste.

Put in oven on middle rack and bake at 350°F for 20 minutes uncovered. Enjoy!
